Imperial Pai Mu Tan White Peony – Vibrant First-Flush Fuding White Tea

Imperial Pai Mu Tan White Peony (Bai Mu Dan) is a luxury-grade white tea harvested from the first flush of this year's spring. It comes from Fuding in Fujian Province, China — a famous region known for producing some of China's most celebrated teas, including Silver Needle and White Peony. In China, White Peony is considered synonymous with wealth and honor.

This is one of the most vibrant and fresh White Peony teas we've ever tasted. It's crafted using modern methods, with the leaves withered and processed indoors to preserve a brilliant green color and fresh flavor. Cold brewed for 1/2 hour. Tablespoon in 1 litre of water. Drank with ice. All I can say is WOW. I'm excited to explore this in many different ways. It has so many layers, its floral, it almost has a fruitiness to it but its not sweet. It reminds of a late summer day on a farm with fresh hay and flowers....not bitter, smooth. Im blown away. I wasn't expecting much bc nothing happened for the first 15 minutes of cold brewing....So much wow!

Lovely white tea! I tried the silver needle and it was good but I like this one even more. It’s a bit sweet and not bitter at all. I would buy again!

Really nice! Prepared it two ways: First, similar to the package instructions, 6g @ 195f for 3 min using ~150ml in a covered Japanese stoneware bowl. Resulted in warm, wicker, light honey notes with very light astringency. Pairs beautifully with white chocolate and macadamia nut.

Secondly, I followed a recipe from Modernist Cuisine: 8g @ 158f for 7 min using 200ml water in a covered glass teapot in a makeshift waterbath (basically a tall plate that a poured the same temperature water into). This resulted in a very nice, full-bodied, sweet-savory tea with a surprisingly thick mouthfeel. Not something you associate white tea with--more often found in gyokuro--but delicious nonetheless.

What this means is that this tea is very flexible in its brewing methods, delivering delicious results. Give it a try!
